INGREDIENTS:

Fruit Filling:

  • 5 red organic apples washed, peeled, cored, and sliced
  • 1/2 cup organic washed blackberries
  • 1 level tablespoon white/brown granulated sugar
  • 1/2 cup spring water

Crumble Topping:

  • 6 ounces flour (I like to use wheat and gluten free flour)
  • 3 ounces vegan/plant based butter or spread
  • 3 ounces of white/brown granulated sugar

METHOD:

  • Pre-heat oven to 375°
  • Place flour in a mixing bowl
  • Add butter or spread, and rub into flour with fingertips until crumbly
  • Add sugar, stir into mixture with metal spoon
  • Put the mixture to one side
  • Place prepared apple and blackberries into a saucepan
  • Sprinkle sugar over the fruit
  • Add the water
  • Heat gently, on a low heat, until fruit is slightly soft, be careful not to overcook
  • Strain your fruit and pour the remaining juice into a jug or cup
  • Pour fruit into an ovenproof dish and place it on a baking tray
  • Evenly sprinkle the topping mix on top, ensuring all fruit is covered
  • Bake in the oven, on the middle shelf for 40 – 45 minutes, until golden brown
  • Remove from oven carefully, and allow to cool slightly, then enjoy!

You may like to serve with vegan/plant based vanilla ice cream or coconut cool whip
