INGREDIENTS:

  • 3 tbsp organic olive oil
  • One 12oz bag of Quorn Meatless Grounds / Mince
  • 2 large organic carrots peeled and diced
  • Half an organic red onion peeled and chopped
  • Half a cup of cooked organic peas (you can use fresh or frozen)
  • 2 vegetable stock cubes
  • 1 tbsp of cornflour
  • 2 cups of boiling water

Topping:

  • 4 pounds of red organic potatoes, peeled, washed, and cut into quarters
  • 1 tbsp plant-based butter/spread or olive oil
  • 2 tbsp almond milk
  • Half cup of plant-based grated cheese (your preference)

METHOD:
* Pre-heat oven to 300°
* Prepare all of your vegetables
* Put potatoes in saucepan cover with cold water, bring to a boil, then simmer for 25 – 30 mins, or until soft
* Add olive oil in a large frying pan and fry chopped onion and carrot until slightly soft (be careful not to overcook)
* Add Quorn Meatless Grounds / Mince  and stir ingredients together
* Pour 2 cups of boiled water over the Quorn and vegetables
* Gently simmer over a low heat for 20 mins
* Add vegetable stock cubes and stir
* Mix 1 tbsp of cornflour with a little cold water and add to the Quorn mixture to thicken it
*  Stir in your cooked peas
* The mixture may need a little extra hot water, but only add if necessary as mixture should be quite thick
* Drain your cooked potatoes and mash with 1 tbsp of plant-based butter/spread or olive oil
* Add 1 or 2 tbsp almond milk and stir until creamy
* Place Quorn mixture into large ovenproof dish
* Cover mixture with mashed potatoes – be sure to cover right to the edges of the dish
* Sprinkle plant-based grated cheese (your preference) on top
* Turn oven temperature up to 375°
* Place dish on a baking tray in the center of oven
* Cook for 30 mins until golden brown
* Remove from oven and serve

You may like to decorate with parsley and serve with your choice of salad, vegetable or plant-based baked beans
